One dish. Two days. We challenged super taster Chris Morocco to blindly taste a dish made by Christina and then reverse engineer it as closely to the original as he can. The challenge this episode: Maangchi's Dakbokkeumtang (Korean spicy braised chicken).

he doesn't think about the dish cohesively. korean dish: is it really a mystery ramps vs scallions? an asian dish without ginger? roasting chicken separately when you have a stew/braise going? probably not.

Chris's taste buds are undoubtedly incredible. But his main problem with this recipe is that I think Chris' knowledge of flavors are just limited to whatever available in the global flavors section of a supermarket.

I’ve always thought that Chris Morocco was the wackest kid, like those kids you meet that are obsessed with dinosaurs and that’s all they talk about. His strawberry shortcake shampoo story has confirmed this for me.
IzzyMP - Mánuði síðan
Kinda stressed me out how he overcomplicated the preparation of the dish as most Asian dishes especially stews are cooked in one pot. But he’s not Asian and probably doesn’t cook a lot of Asian stews so nailing almost all the ingredients was still freaking impressive.

Asian pears and scallions in this dish are Chris’s Red Leicester moment (should have gone for apples instead and definitely over thunk the whole scallion issue).🤣
Ellen Kusuma
Ellen Kusuma - 2 mánuðum síðan
When he boiled the scallion in another pan... I mean he gets the taste, but he misses the culture of Korean cooking, or broadly a Asian cooking to put everything in one pot.

It's insane how he reverse engineers them so accurately, blindfolded. The very first try, he nailed the look of the dish, without even looking at it. That just blows my mind.
