I used water keifer grains in my ginger drink... Apparently I should have used another half dozen roots! Ginger, a slice of lemon, and sugar.
You have to feed it every day.
In the end water keifer was kinda like having a pet or a small child but more demanding.

If you are using NYC tap water, make sure you boil the water first to get rid of chlorine in the water. I noticed the difference when I make kombucha. The boil water and let it cool down allows me to ferment the kombucha in a week while if I didnt boil the nyc tap water, I needed to ferment for at least two weeks or longer. When I was living in Alaska, I didn't have this problem.

*Is that Galangal or ginger?* The stuff I find in the grocery looks a lot dryer, even when peeled (and Brad's looks like it has little shoots). Or does it even matter if I used the dryer one I can get? I really want to make this, anyone know? 🙄 This whole quarantine thing... I feel like I want to make everything! It didn't carbonate well at first because he only waited 3 days and those plastic bottles do not reseal once cracked open so they don't hold pressure. It also really helps to measure the sugar left after fermentation to know if there is anything even left to carbonate the beer.

I like fun just as much as the next man but jeez, if want i irreverence and bland chit chat i'd look elsewhere. Should have done a yeast starter pitch to really kick off the fermentation. Depending on wild yeasts that are on the ginger just isn't reliable. Also, your secondary fermentation you should have thrown in a teaspoon of sugar into every bottle so that it would continue the fermentation. A quick trick to this is to take an empty plastic pop bottle, put in the same stuff you are bottling, and cap it. When the bottle gets to your desired firmness (carbonation) bring a big pot of water up to a boil, turn off the heat, and put all of your bottles into the water though you must make sure that the boiled/cooling water is above the liquid line in each bottle. You basically pasteurize it and it's perfectly carbonated.

You have to use organic ginger or the pesticides/herbicides they spray on the non-organic ginger will kill the bacteria and yeast and fermentation won't happen.
